In late 2017, we opened Blue Smoke on the Bay at Low Wood Bay Resort & Spa as part of the resort’s £16 million redevelopment. The new restaurant introduced a different style of dining to Low Wood Bay, centred on an open kitchen and a three-metre-long double wood-fired grill. Contemporary reports confirm that Blue Smoke was operating by December 2017. The grill became the centrepiece of the restaurant, with chefs cooking steaks, meats, fish and vegetables directly over hot embers. Sustainable British woods, including elder, birch and oak, were used to create different flavours, while the open kitchen allowed diners to see the cooking process. The restaurant also made use of its position overlooking Windermere, combining the new dining concept with views across the lake. Blue Smoke expanded the choice of food and drink available at Low Wood Bay during a period of extensive investment in the resort. Its opening was followed by further elements of the redevelopment, including new spa facilities and the Winander Club.
